General Comments
Upon the original inspection the kitchen area has 3 major point violations, an not work cooler, and various minor violations. Jaime Olivares volunteered that the kitchen would cease operations in order to correct the violations. All food cooked or cooled would be discarded.
HACCP: Jaime agreed to create a cleaning chart, a proper handwashing chart, and make sure that proper food handling and sanitation were taught to the employees.

At 4 pm the cooler at the kitchen was 41 degrees. Jaime posted a handwashing sign in the kitchen. The kitchen can not operate. A follow-up inspection will occur in 5 days.

All major violations were corrected.

At the follow-up inspection if there are any of the same major point violations are observed the license may be suspended.
